Mango or Pineapple Compote With Yoghurt
This low calorie comforting desert /snack is a favourite within the Afrofusion community and has become a favourite for my children who insisted mummy and daddy share. It is also easy to make such that my son makes it for the family every second day , when he is around.

- 100 grams Mango or pineapple
- 1 Tsp Vanilla essence
- 1 Tsp Honey or 2 pitted dates finely chopped
- Zest of one lime
- 200 grams Alpro plain or Coconut yoghurt
Put the chopped or frozen fruits, dates or honey vanilla essence and zest in a small saucepan and heat gently for 3-5 minutes or until the fruit has thawed and warmed, stirring regularly. Add a splash of water if needed, to help the fruit soften
Either divide the yoghurt between two bowls and spoon the warm compote on top. Eat immediately
Or Refrigerate the compote and then when cold, spoon compote and yoghurt in altering layers as on picture in a glass.
