Motherland chili mayonnaise dip or ½ teaspoon red chilliflakes (optional)
Salt and seasonings to taste
Instructions
Poke the sweet potato multiple times with a fork and then place on a microwave-safe plate.
Cook in the microwave for 3-4 minutes or until tender.
Remove and let cool for 2 minutes before cutting in half long ways.
In a large frying pan using olive oil, stir fry the spinach and paprika slices until the spinach is wilted.
Top sweet potato halves with spinach combination, poached egg and seasons to taste.
Serve with the motherland chili mayonnaise dip
