Fusion Bulgar Waakye (Rice substitute & beans)
This yummy Ghanaian specialty is a favourite I inherited from my Doha Ghanaian friends who have become like sisters.

- 1 Cup Bulgur wheat rice
- 2 397g Cans red beans (or black-eyed peas)
- 1 Dozen Leaves of dried millet (waakye)
- 1 Stock cube
- Salt to taste
Put the dried leaves of millet in 1 liter of boiling water for 15 minutes until the water is well colored. Remove the waakye leaves and stir
Rinse the bulgur wheat in water a couple times.
In a pot, pour 2 cans of beans (without the water) and the bulgar
Pour the coloured water on the rice and beans. Add water if necessary.
Season with salt and stock cube
Cover and cook for 15 minutes or until the rice is cooked and has absorbed all the water
Serve with a side of chicken stew
