Ingredients
  

  • 1 Large Sweet Potato
  • 1/2 Pointed red paprika – sliced
  • 2 Eggs Poached
  • 2 Cups Cups Spinach
  • 1 tbsp Olive Oil
  • 2 tbsp Motherland chili mayonnaise dip or ½ teaspoon red chilliflakes (optional)

  • Salt and seasonings to taste

Instructions
 

  • Poke the sweet potato multiple times with a fork and then place on a microwave-safe plate.
  • Cook in the microwave for 3-4 minutes or until tender.
  • Remove and let cool for 2 minutes before cutting in half long ways.
  • In a large frying pan using olive oil, stir fry the spinach and paprika slices until the spinach is wilted.
  • Top sweet potato halves with spinach combination, poached egg and seasons to taste.
  • Serve with the motherland chili mayonnaise dip
