Plantain Chips and Guacamole

Baked or air fried Plantain chips are very healthy snacks due to the complex carbohydrates, vitamins, and minerals, and they are easily digestible.
They are crunchy and salty and good for cravings consumed in moderation. Use healthy oils such as olive, avocado or coconut oil.

Ingredients
  

  • 1 Green plantain
  • 1/2 Tbsp Avocado or vegetable oil or olive oil spray
  • Sea salt and black pepper to taste

Instructions
 

  • Preheat your oven to 350 degrees F or 180C
  • With a small knife, make 3-4 cuts lengthwise down the plantain, just enough to go through the peel. Then remove the peel.
  • Thinly slice the plantain with a mandoline if available (on the thinnest setting). Add the plantain slices to a bowl and toss with the avocado oil to evenly coat.
  • Line a baking tray with parchment paper and place the plantain slices on the tray in one layer. Sprinkle with sea salt and bake for 15-20 minutes, or until just golden along the edges.

The glycaemic index ( unripe plantains low- 41, ripe plantains moderate 54.6)
Serve with guacamole
