Fusion Speedy Poached Eggs & Sweet Potato
This speedy poached Egg Sweet Potato Breakfast recipe is packed with flavour, filling and perfect to break your fast. It is low carb and filled with protein
Ingredients
- 1 Large Sweet Potato
- 1/2 Pointed red paprika – sliced
- 2 Eggs Poached
- 2 Cups Cups Spinach
- 1 tbsp Olive Oil
- 2 tbsp Motherland chili mayonnaise dip or ½ teaspoon red chilliflakes (optional)
- Salt and seasonings to taste
Instructions
- Poke the sweet potato multiple times with a fork and then place on a microwave-safe plate.
- Cook in the microwave for 3-4 minutes or until tender.
- Remove and let cool for 2 minutes before cutting in half long ways.
- In a large frying pan using olive oil, stir fry the spinach and paprika slices until the spinach is wilted.
- Top sweet potato halves with spinach combination, poached egg and seasons to taste.
- Serve with the motherland chili mayonnaise dip
