Fusion Okro Soup and Cabbage/Cauliflower Fufu
I was not too keen on Okro as a child and had to be forced to eat it. However it grew on me after cooking it lots of times for my brother Manny and father in law who both adored it. The classic if you can’t beat them join them! It soon became a favourite and was a staple for my children who loved it as babies. It also became a staple and magic bullet during my endeavour to loose the covid bulge weight. Okro and cauliflower fufu is literally a marriage made in heaven and eaten three times a week will yield great results! It is recommended for all West African Afrofusion clients. Definitely the lowest hanging fruit ( see below for more details regarding cauliflower fufu) !
Ingredients
- 3 tbsp Palm oil
- 1 Chopped red onion
- 400 g Beef – preferably on the bone (e.g., brisket or rib or oxtail)
- 1 Fresh paprika or ½ bell Pepper
- 1 tsp Fresh ground ginger
- 1 tsp Fresh ground garlic
- 1/2 tbsp Motherland pepper sauce or chilli flakes or one Habanero pepper
- 2 Seasoning cubes and 200ml water or 400ml stock
- 100 g Thawed frozen Baby spinach or cup of chopped fresh spinach
- 200 g Sliced mushrooms sliced
- 1/4 cup Crayfish
- 200 g Smoked Mackerel 2- deboned
- 450 g Okra (lady fingers) – finely hand chopped or blended
Instructions
- Add 100ml of stock, beef, ginger, garlic onions and two seasoning cubes to sauce pan and bring to boil. stir and mix for 1 minute and then add 300ml of water and stock mix bring to boil and simmer for 20-30 minutes
- In another sauce pan, melt and heat up 2 tablespoons of palm oil and sauté the mushrooms for five minutes and remove from oil
- In another sauce pan Add the chopped okra and rest of onions in oil and sauté for 3 mins until elasticity comes through
- Then Add the beef and 200ml of the beef stock to the okra mix
- Add meat, mushroom, peppers, crayfish and spinach and mix and cook for 3 mins to blend
- Add salt and pepper to taste.
- Serve with cauliflower or cabbage fufu
