Fusion Garden egg/Aubergine Stew

Ingredients
  

  • 1 tbsp Olive or palm oil
  • 3 Small onions chopped
  • 2 tbsp Ginger and garlic paste
  • 1 tsp Motherland chilli pastes or Chilli flakes (optional)
  • 200 g Tomatoe base
  • Pinch of Dawadawa (optional)
  • 1/4 cup Crayfish
  • 2 Stock cubes and 100ml of water or 100ml stoc
  • 200 g fresh wilted spinach
  • 100 g Deveined prawns
  • 200 g Smoked fish
  • 200 g Boiled beef cubes
  • 15 Small garden eggs or 3 large aubergines
  • 1/4 Red bell peppers
  • 1/4 Green bell peppers
  • Salt and black pepper taste

Instructions
 

  • Slice the garden egg /aubergine and add to pan of salted boiling water, and let simmer for 15 minutes, then drain and marsh till forms a paste
  • Heat the oil in a non-stick saucepan, add half the sliced onion and gently fry for 3-4 minutes or until soft
  • Add the crayfish,garlic, ginger and pepper and cook for few seconds stirring
  • Add the tomatoe base and cook for 45 minutes until thickened
  • Add the meat and fish and cook for 5 minutes or until the sauce is thickened. Stir regularly
  • Add the marshed garden egg and cook for 5 minutes
  • Add the prawns and mushrooms and cook for 5 minutes
  • Add the spinach and cook for 2 minutes
  • Add the spring onions, peppers and reserved onions and stir for 2 minutes
  • Serve with boiled yam, garri, plantains or cauliflower fufu
  • Serve with the baked sweet potatoes (90 calories) or protein toast (77 calories) or brown bread (92 calories)
