Fusion Bulgar Waakye (Rice substitute & beans)
This yummy Ghanaian specialty is a favourite I inherited from my Doha Ghanaian friends who have become like sisters.
Ingredients
- 1 Cup Bulgur wheat rice
- 2 397g Cans red beans (or black-eyed peas)
- 1 Dozen Leaves of dried millet (waakye)
- 1 Stock cube
- Salt to taste
Instructions
- Put the dried leaves of millet in 1 liter of boiling water for 15 minutes until the water is well colored. Remove the waakye leaves and stir
- Rinse the bulgur wheat in water a couple times.
- In a pot, pour 2 cans of beans (without the water) and the bulgar
- Pour the coloured water on the rice and beans. Add water if necessary.
- Season with salt and stock cube
- Cover and cook for 15 minutes or until the rice is cooked and has absorbed all the water
- Serve with a side of chicken stew
